Gleichzeitig bleiben allein in der Schweiz mehr als 950\u2019000 Tonnen leicht verf\u00fcgbarer, wertvoller Lebensmittel ungenutzt.<\/p>\n<h3>Grosses Marktpotenzial f\u00fcr Fleischalternativen<\/h3>\n<p>Die Produkte von Luya befriedigen den wachsenden Bedarf an n\u00e4hrstoffreichen fleischlosen Proteinquellen und reduzieren gleichzeitig die Lebensmittelverschwendung. Der globale Markt f\u00fcr alternative Proteine soll bis 2029 ein Volumen von USD 140 Milliarden erreichen; mehr als 14 Millionen Tonnen Okara (Sojabohnenschnitzel), die Hauptzutat von Luya, landen jedes Jahr weltweit im Abfall. Das Foodtech-Startup bietet mit seinem intelligenten Herstellungsprozess eine umweltfreundliche L\u00f6sung: Im Vergleich zur Produktion der gleichen Menge an rotem Fleisch kann Luya bis zu 95 % der Treibhausgasemissionen vermeiden.<\/p>\n<p>Luyas neuartiger und patentrechtlich gesch\u00fctzter Produktionsprozess nutzt ein tempeh-\u00e4hnliches Fermentationsverfahren und nur zwei Grundzutaten \u2013 Okara und Kichererbsen \u2013 um strukturierte, saftige und geschmackvolle Produkte herzustellen, die minimal verarbeitet sind und einen gesunden Anteil an Proteinen, Ballaststoffen und Mikron\u00e4hrstoffen aufweisen. Die in der Schweiz hergestellten Fleischalternativen sind zudem biozertifiziert. Die Verbraucher k\u00f6nnen die vielseitigen Produkte \u00e4hnlich wie Fleisch oder Fleischalternativen zubereiten.<\/p>\n<h3>Pilotanlage geht demn\u00e4chst in Betrieb<\/h3>\n<p>Luya wurde von Dr. Christoph Denkel, Flavio Hagenbuch, Tobias Kistler und Michael Whyte gegr\u00fcndet. In den kommenden Monaten wird das Startup seine Pilotanlage er\u00f6ffnen, um die wachsende Nachfrage zu befriedigen und die Produkte in weitere Restaurants und Einzelh\u00e4ndler in der Schweiz zu bringen. Das Luya-Team wird die Venture Kick Gelder nutzen, um den Produktionsausbau zu beschleunigen und seine Festk\u00f6rperfermentations-Technologie weiterzuentwickeln.
