Nahrungsmittel aus Nebenstr\u00f6men der Bierbrauerei: das Appenzeller Startup UpGrain wurde Anfang Juni in St.Gallen mit dem renommierten Startfeld Diamant 2025 ausgezeichnet. Nach dem Gewinn des Swiss Sustainability Impact Awards<\/a> ist es bereits die zweite Auszeichnung, die das Jungunternehmen innerhalb weniger Monate entgegennehmen durfte.<\/p>\n

Vision von zirkul\u00e4ren Lebensmittelsystemen verwirklicht<\/h3>\n

Die 2021 gegr\u00fcndete UpGrain AG nutzt modernste Upcycling-Technologien, um aus Biertreber hochwertiges Protein- und Ballaststoffpulver zu gewinnen. Die von UpGrain hergestellten Produkte lassen sich in zahlreiche Rezepturen von Back-, Teigwaren und Snacks integrieren. Diese Rohstoffe bieten eine umweltfreundliche Alternative f\u00fcr die Lebensmittelindustrie und tragen zu einer ressourcenschonenden Produktion bei. Die Freude \u00fcber den Gewinn des Startfeld Diamant 2025 ist gross:\u00a0\u00abDiese Auszeichnung ist eine grosse Ehre f\u00fcr unser Team und beweist, dass unsere Vision von nachhaltigen, zirkul\u00e4ren Lebensmittelsystemen Schule machen wird\u00bb, sagt Vincent Vida, Gr\u00fcnder von UpGrain.<\/p>\n

Starke Partnerschaften mit Signalwirkung<\/strong><\/h3>\n

Gemeinsam mit der Brauerei Locher hat UpGrain im vergangenen Jahr Europas gr\u00f6sste Food Upcycling Anlage<\/a> in Betrieb genommen. Die Anlage verarbeitet j\u00e4hrlich rund 25.000 Tonnen Biertreber zu Proteinen und Ballaststoffen f\u00fcr die Lebensmittelindustrie. Diese finden Verwendung als Mehlersatz, zur Texturverbesserung in Backwaren und Fleischersatzprodukten sowie als Grundlage f\u00fcr proteinreiche Snacks und Getr\u00e4nke. Dieser Prozess tr\u00e4gt zur Reduktion von CO\u2082-Emissionen bei, spart Wasser und verringert den Bedarf an Ackeranbaufl\u00e4chen f\u00fcr traditionelle Proteinquellen wie Weizen oder Soja. Aur\u00e8le Meyer, Gesch\u00e4ftsleiter der Brauerei Locher, betont: \u00abUpGrain hat gezeigt, dass es mit seiner Entwicklung im Bereich Food-Upcycling eine skalierbare Innovation geschaffen hat, welche die Nebenstr\u00f6me unserer Brauerei vielseitig einsetzbar machen.\u00bb Jury-Mitglied Bettina Hein G\u00f6ldi erg\u00e4nzt:\u00a0\u00abUpGrain hat mit seinem nachhaltigen Innovationsansatz \u00fcberzeugt.
