(Image : Unsplash)<\/figcaption><\/figure>\n<p class=\"bodytext\">En moyenne, 16 pour cent de la surface agricole utile en Suisse est exploit\u00e9e par des exploitations biologiques. Pour les l\u00e9gumineuses, la production biologique repr\u00e9sente d\u00e9j\u00e0 29 pour cent des surfaces cultiv\u00e9es, et 21 pour cent pour les l\u00e9gumes. En revanche, la viticulture biologique est moins d\u00e9velopp\u00e9e que la moyenne, avec 10 pour cent de la surface viticole.<\/p>\n<\/div>\n<div class=\"news-content\">\n<p class=\"bodytext\">L'ann\u00e9e derni\u00e8re, 50'038 exploitations paysannes ont \u00e9t\u00e9 enregistr\u00e9es en Suisse, soit 814 de moins que l'ann\u00e9e pr\u00e9c\u00e9dente. Elles ont exploit\u00e9 au total 1'043'729 hectares, soit 1247 hectares de moins qu'en 2018. Ce recul se fait uniquement au d\u00e9triment des exploitations de production traditionnelle.<\/p>\n<p class=\"bodytext\">Le nombre d'exploitations agricoles bio a en revanche augment\u00e9 de 252 pour atteindre 7284. Ensemble, elles exploitent 170 007 hectares, soit 8986 hectares de plus qu'en 2018. Les p\u00e2turages d'estivage ne sont pas compris dans ce chiffre.<\/p>\n<p class=\"bodytext\">Les Grisons restent le seul canton o\u00f9 les exploitations bio sont majoritaires : 1305 exploitations bio exploitent 36'889 hectares, tandis que 945 exploitations de production conventionnelle en exploitent 19'288. Berne et Vaud affichent la plus forte croissance avec respectivement 39 et 37 exploitations bio de plus, la surface exploit\u00e9e en bio ayant augment\u00e9 de 1227 et 1835 hectares dans les deux cantons.<\/p>\n<\/div>\n<p><em>Extrait du communiqu\u00e9 de presse de l'Office f\u00e9d\u00e9ral de la statistique OFS<\/em><\/p>\n<p><strong>Moins de bl\u00e9 panifiable et de betteraves sucri\u00e8res<\/strong><br \/>\nEn 2019, la surface agricole utile (SAU) comprenait majoritairement des prairies naturelles et des p\u00e2turages (605 700 hectares, soit 58% de la SAU). Les grandes cultures \u00e9taient pratiqu\u00e9es sur 398 800 hectares (38% de la SAU). Le site<br \/>\nLes autres surfaces (38 200 ha ; 4% de la SAU) \u00e9taient constitu\u00e9es entre autres de vignobles (13 400 ha) et de vergers (7000 ha).<\/p>\n<p>Les cultures ont \u00e9volu\u00e9 diff\u00e9remment en 2019. La surface cultiv\u00e9e en bl\u00e9 panifiable (73 600 ha) a diminu\u00e9 de 2,8%, celle en betteraves sucri\u00e8res a encore perdu 1 000 hectares en 2019 pour atteindre 17 600 hectares. La superficie consacr\u00e9e aux l\u00e9gumes a \u00e9galement diminu\u00e9 (11 900 ha ; -2,1%), apr\u00e8s plusieurs ann\u00e9es de croissance. En revanche, la culture du tournesol a augment\u00e9 en 2019 (5900 ha ; +9,6%).<br \/>\nLes surfaces cultiv\u00e9es en avoine (1700 ha, +5,2%) et en \u00e9peautre (5700 ha, +6%) ont \u00e9galement connu une croissance particuli\u00e8rement forte. Certaines cultures de niche, comme le millet et le sorgho, le chanvre et les lentilles, ont \u00e9galement augment\u00e9 \u00e0<br \/>\nen progression.<\/p>\n<p>L'agriculture biologique fait d\u00e9sormais partie int\u00e9grante de l'agriculture suisse et est pratiqu\u00e9e sur 16% des surfaces. Les surfaces cultiv\u00e9es biologiquement repr\u00e9sentent 21% pour les l\u00e9gumes, et<br \/>\n29% pour les l\u00e9gumineuses et 10% pour les vignes. En revanche, les betteraves sucri\u00e8res bio ne sont pas tr\u00e8s r\u00e9pandues, avec seulement 1%.<\/p>\n<p><strong>Toujours moins de vaches laiti\u00e8res et de porcs, plus de volaille<\/strong><br \/>\nComme les ann\u00e9es pr\u00e9c\u00e9dentes, le cheptel bovin a continu\u00e9 de diminuer en 2019 (-1,2%). Cette tendance a \u00e9t\u00e9 particuli\u00e8rement marqu\u00e9e pour les vaches laiti\u00e8res (554 600 t\u00eates, -1,7%). Depuis 1999, les<br \/>\nLes effectifs de vaches laiti\u00e8res ont baiss\u00e9 de 19%, le nombre d'\u00e9levages a \u00e9galement diminu\u00e9 (-47%).<\/p>\n<p>Stimul\u00e9e par le succ\u00e8s de la production bio, la production de viande bovine a gagn\u00e9 en importance de mani\u00e8re analogue aux ann\u00e9es pr\u00e9c\u00e9dentes : le nombre de vaches allaitantes a augment\u00e9 de 2,2%. Leurs effectifs ont tripl\u00e9 en 20 ans (1999 : 41 200 ; 2019 : 128 300). Dans le domaine de la production de viande porcine, tant le nombre de producteurs (5800 ; -5,7%) que les effectifs d'animaux (-4,1%) ont diminu\u00e9.<\/p>\n<p>L'aviculture a globalement enregistr\u00e9 une reprise en 2019 (+2,5%). En raison de la hausse de la demande, le nombre de poules pondeuses a augment\u00e9 de 5,3% par rapport \u00e0 2018. 18% d'entre elles sont \u00e9lev\u00e9es sous<br \/>\nun label bio ont \u00e9t\u00e9 \u00e9lev\u00e9s. En revanche, le nombre de poulets de chair est rest\u00e9 stable par rapport \u00e0 l'ann\u00e9e pr\u00e9c\u00e9dente. Les effectifs de moutons et de ch\u00e8vres sont \u00e9galement rest\u00e9s pratiquement inchang\u00e9s en 2019. Ces derniers sont<br \/>\nprincipalement dans les cantons de Berne, des Grisons, du Valais et de Saint-Gall. Les trois quarts du cheptel de brebis laiti\u00e8res sont \u00e9lev\u00e9s selon les r\u00e8gles de l'agriculture biologique.<\/p>\n<p><em>Le transfert vers la production bio se manifeste donc d\u00e9finitivement dans la production de viande : selon l'OFS, le nombre de vaches allaitantes a augment\u00e9 de 2,2 pour cent en 2019, tandis que le nombre de vaches laiti\u00e8res a diminu\u00e9 de 1,7 pour cent, c'est ce que montre l'Office f\u00e9d\u00e9ral de la statistique (<a href=\"\/\/www.bfs.admin.ch\/\" target=\"_blank\" rel=\"noopener\">OFS<\/a>) dans une\u00a0<a href=\"\/\/www.bfs.admin.ch\/bfsstatic\/dam\/assets\/12907133\/master\" target=\"_blank\" rel=\"noopener\">Communiqu\u00e9<\/a>.<\/em><\/p>","protected":false},"excerpt":{"rendered":"<p>Im Durchschnitt werden 16 Prozent der landwirtschaftlichen Nutzfl\u00e4che schweizweit durch Biobetriebe bewirtschaftet.
