La demande des consommateurs en produits v\u00e9g\u00e9taux ne cesse de cro\u00eetre, mais les alternatives \u00e0 la viande existantes contiennent souvent de nombreux ingr\u00e9dients artificiels et n\u00e9cessitent des isolats de prot\u00e9ines co\u00fbteux et tr\u00e8s raffin\u00e9s. Parall\u00e8lement, rien qu'en Suisse, plus de 950 000 tonnes d'aliments pr\u00e9cieux et facilement disponibles restent inutilis\u00e9s.<\/p>\n

Un grand potentiel de march\u00e9 pour les alternatives \u00e0 la viande<\/h3>\n

Les produits Luya r\u00e9pondent \u00e0 la demande croissante de sources de prot\u00e9ines sans viande, riches en nutriments, tout en r\u00e9duisant le gaspillage alimentaire. Le march\u00e9 mondial des prot\u00e9ines alternatives devrait atteindre 140 milliards de dollars d'ici 2029 ; plus de 14 millions de tonnes d'okara (pulpe de soja), l'ingr\u00e9dient principal de Luya, finissent \u00e0 la poubelle chaque ann\u00e9e dans le monde. Gr\u00e2ce \u00e0 son processus de fabrication intelligent, la startup de la foodtech propose une solution respectueuse de l'environnement : Par rapport \u00e0 la production de la m\u00eame quantit\u00e9 de viande rouge, Luya peut \u00e9viter jusqu'\u00e0 95 % d'\u00e9missions de gaz \u00e0 effet de serre.<\/p>\n

Le nouveau processus de production de Luya, prot\u00e9g\u00e9 par un brevet, utilise un proc\u00e9d\u00e9 de fermentation similaire au tempeh et seulement deux ingr\u00e9dients de base - l'okara et les pois chiches - pour fabriquer des produits structur\u00e9s, juteux et savoureux, qui subissent un minimum de transformation et contiennent une quantit\u00e9 saine de prot\u00e9ines, de fibres et de micronutriments. Les alternatives \u00e0 la viande fabriqu\u00e9es en Suisse sont en outre certifi\u00e9es bio. Les consommateurs peuvent pr\u00e9parer ces produits polyvalents de mani\u00e8re similaire \u00e0 la viande ou aux substituts de viande.<\/p>\n

L'installation pilote sera bient\u00f4t en service<\/h3>\n

Luya a \u00e9t\u00e9 fond\u00e9e par le Dr Christoph Denkel, Flavio Hagenbuch, Tobias Kistler et Michael Whyte. Dans les mois \u00e0 venir, la start-up ouvrira son usine pilote afin de r\u00e9pondre \u00e0 la demande croissante et d'amener ses produits dans d'autres restaurants et d\u00e9taillants en Suisse. L'\u00e9quipe de Luya utilisera les fonds Venture Kick pour acc\u00e9l\u00e9rer l'expansion de la production et continuer \u00e0 d\u00e9velopper sa technologie de fermentation \u00e0 l'\u00e9tat solide.
