La culture de prot\u00e9ines animales a un grand potentiel de r\u00e9duction de la consommation d'\u00e9nergie, d'eau et de terres. Actuellement, seule la production de fines couches de prot\u00e9ines animales cultiv\u00e9es, comme la viande ou le poisson, est possible, ce qui limite l'offre \u00e0 des produits de viande hach\u00e9e ou \u00e0 des produits finis compos\u00e9s principalement de squelette et d'une faible proportion de masse cellulaire. Pour cultiver des morceaux entiers enti\u00e8rement textur\u00e9s, il est indispensable de d\u00e9velopper de nouveaux caffolds de croissance cellulaire. La plateforme de structuration 3D de sallea produit des scaffolds comestibles qui pallient les limites des syst\u00e8mes actuels en soutenant la croissance cellulaire en 3D tout en am\u00e9liorant la texture, le go\u00fbt et la valeur nutritionnelle du produit final.<\/p>\r\n<p>Le march\u00e9 global de l'agriculture cellulaire conna\u00eet une croissance rapide, avec un taux de croissance pr\u00e9vu de 93% au cours des 10 prochaines ann\u00e9es, ce qui devrait permettre au march\u00e9 de la viande cultiv\u00e9e d'atteindre 20 milliards de dollars en 2030. Les premiers clients potentiels de sallea ont re\u00e7u cet \u00e9t\u00e9 l'autorisation r\u00e9glementaire de vendre leurs produits transform\u00e9s aux \u00c9tats-Unis.<\/p>\r\n<p>La startup va investir les 150 000 CHF pour renforcer son d\u00e9veloppement commercial et acc\u00e9l\u00e9rer son exploration du march\u00e9 am\u00e9ricain.<\/p>\r\n<p>Les cofondatrices de Sallea, la CEO Simona Fehlmann, titulaire d'un MSc en sciences des mat\u00e9riaux de l'EPF, le CTO Dr Nicole Kleger, titulaire d'un PhD en sciences des mat\u00e9riaux de l'EPF, et la CCO Anna B\u00fcnter, titulaire d'un M.A. HSG, se sont donn\u00e9 pour mission de r\u00e9volutionner le secteur de la foodtech avec des scaffolds innovants.<\/p>\r\n<p>\"Venture Kick a \u00e9t\u00e9 d'une importance capitale pour nous, car il nous a permis de faire progresser fortement le d\u00e9veloppement de l'entreprise gr\u00e2ce aux formidables retours des jur\u00e9s et aux inputs re\u00e7us pendant les Kickers Camps.
