(Image symbolique : Unsplash)<\/figcaption><\/figure>\n<p>Le gaspillage alimentaire est aujourd'hui sur toutes les l\u00e8vres, car le r\u00e9chauffement climatique concerne d\u00e9finitivement chacun et chacune. Mais quelle est l'influence du gaspillage alimentaire en Suisse sur le climat ? Claudio Beretta l'a soulign\u00e9 lors du SGES de cette ann\u00e9e : Un tr\u00e8s grand : \"Environ un tiers de la production de CO2 est d\u00fb \u00e0 la production alimentaire. C'est autant que les transports\" !<\/p>\n<p>Une partie importante du programme du SGES a donc \u00e9t\u00e9 consacr\u00e9e \u00e0 la question \u00e9vidente de savoir pourquoi nous gaspillons autant de nourriture et comment nous pourrions peut-\u00eatre mieux g\u00e9rer ces ressources ?<\/p>\n<p><strong>Le gaspillage alimentaire en Suisse <\/strong><\/p>\n<p>Claudio Beretta, cofondateur et pr\u00e9sident de l'association foodwaste.ch, a introduit la th\u00e9matique du gaspillage alimentaire lors du forum d'innovation \"ALIMENTATION : BONNE, SAINE, BONNE, TRANSPORTABLE POUR L'ENVIRONNEMENT\" :<\/p>\n<p>\"La raison principale du gaspillage alimentaire est que nous pouvons nous le permettre. En moyenne, nous ne d\u00e9pensons qu'environ sept pour cent de nos revenus pour la nourriture. C'est pourquoi nous en prenons beaucoup moins soin que les g\u00e9n\u00e9rations plus anciennes\".<\/p>\n<p>De mani\u00e8re probl\u00e9matique, la plupart des \"d\u00e9chets\" sont produits \u00e0 la fin de la cha\u00eene d'approvisionnement, c'est-\u00e0-dire chez le consommateur final. Beretta explique les exigences des consommateurs : \"Les aliments doivent toujours \u00eatre disponibles, nous voulons une grande vari\u00e9t\u00e9, des produits de haute qualit\u00e9 et impeccables. Tout le reste finit dans le seau\".<\/p>\n<p>Malheureusement, l'appr\u00e9ciation de la nourriture dans nos pays industrialis\u00e9s diminue parall\u00e8lement : Manger ne doit pas \u00eatre trop cher et doit \u00eatre rapide.<\/p>\n<p><strong>Le gaspillage alimentaire dans l'industrie <\/strong><\/p>\n<p>\"De m\u00eame, nous ne savons pas exactement de quoi et comment le produit que nous achetons a \u00e9t\u00e9 fabriqu\u00e9. C'est d'autant plus probl\u00e9matique que beaucoup ne veulent pas admettre qu'ils fabriquent des aliments, y compris des ingr\u00e9dients v\u00e9g\u00e9taliens, sur une base artificielle ... ou ne le r\u00e9alisent tout simplement pas, car il s'agit \u00e0 chaque fois de petites quantit\u00e9s\".<\/p>\n<p>Cette quantit\u00e9 consid\u00e9rable de sous-produits n'est pas facilement recyclable et compostable.
