(Image : SV Group)<\/figcaption><\/figure>\n<p>SV Suisse confirme son r\u00f4le de pionnier en mati\u00e8re de d\u00e9veloppement durable gr\u00e2ce \u00e0 un partenariat novateur avec Beelong. Cette entreprise a cr\u00e9\u00e9 un syst\u00e8me d'\u00e9valuation et d'\u00e9tiquetage qui permet aux clients de reconna\u00eetre imm\u00e9diatement la durabilit\u00e9 d'un menu. La collaboration entre SV et Beelong ouvre de nouvelles portes \u00e0 l'alimentation durable dans la restauration collective. Tous les produits utilis\u00e9s dans les menus sont \u00e9valu\u00e9s selon dix crit\u00e8res de durabilit\u00e9 et class\u00e9s sur une simple \u00e9chelle de feux de signalisation allant de A+ \u00e0 E-. Il en r\u00e9sulte un score global par menu.<\/p>\n<p>D\u00f6rte Bachmann, responsable du d\u00e9veloppement durable chez SV Group, explique : \"Avec l'Eco-Score, nous faisons un grand pas en avant. L'\u00e9chelle des feux de signalisation montre \u00e0 nos h\u00f4tes de mani\u00e8re tr\u00e8s transparente comment nous nous engageons pour une alimentation respectueuse de l'environnement. Ce qui est particuli\u00e8rement important pour nous, c'est que nous ne voulons infantiliser personne. Nos h\u00f4tes ont le libre choix. Mais gr\u00e2ce \u00e0 l'Eco-Score, ils peuvent prendre une d\u00e9cision bien inform\u00e9e. Nous associons ainsi durabilit\u00e9 et libert\u00e9 de choix - et c'est pr\u00e9cis\u00e9ment notre objectif\".<\/p>\n<p>\"Gr\u00e2ce \u00e0 plus de 300 restaurants SV, nous pouvons contribuer \u00e0 influencer les habitudes alimentaires de milliers de personnes afin de r\u00e9duire l'impact environnemental des repas. Les donn\u00e9es environnementales complexes du secteur de la restauration peuvent ainsi \u00eatre pr\u00e9sent\u00e9es de mani\u00e8re simple et compr\u00e9hensible. La m\u00e9thode Eco-Score a \u00e9t\u00e9 test\u00e9e dans sept restaurants du personnel, notamment au centre de formation continue Holzweid (WBZ), qui appartient \u00e0 l'universit\u00e9 de Saint-Gall et qui, gr\u00e2ce \u00e0 ses efforts dans le domaine du d\u00e9veloppement durable, s'est vu d\u00e9cerner la semaine derni\u00e8re le label ibex fairstay : \"Le d\u00e9veloppement durable est tr\u00e8s important pour nous. Nous sommes d'autant plus heureux de pouvoir offrir \u00e0 nos h\u00f4tes, en collaboration avec SV et Eco-Score, la possibilit\u00e9 d'opter en toute connaissance de cause pour un menu durable. Ceux-ci sont actuellement \u00e9valu\u00e9s par SBTi et seront publi\u00e9s prochainement. L'entreprise annonce d\u00e9j\u00e0 l'objectif le plus important : Z\u00e9ro net d'ici 2045. \"La m\u00e9thode d'\u00e9valuation holistique Eco-Score de Beelong s'inscrit dans notre strat\u00e9gie de travail bas\u00e9e sur les donn\u00e9es. Nous misons sur des connaissances scientifiques solides et des r\u00e9sultats mesurables. Nous nous distan\u00e7ons de l'esbroufe\", explique D\u00f6rte Bachmann, responsable de la durabilit\u00e9 chez SV Group.<\/p>\n<p>La m\u00e9thode Eco-Score prend en compte dix crit\u00e8res : Co<sub>2<\/sub>L'empreinte carbone, l'empreinte eau, l'utilisation des sols, la saisonnalit\u00e9, le bien-\u00eatre animal et les labels, la biodiversit\u00e9 et les labels, le transport et la distance, l'emballage, les esp\u00e8ces menac\u00e9es et la m\u00e9thode de p\u00eache ainsi que la politique d'entreprise. La m\u00e9thode constitue ainsi une \u00e9valuation globale de la durabilit\u00e9 des menus.
