Ce que beaucoup ignorent : Le fromage est le deuxi\u00e8me aliment ayant la plus grande empreinte \u00e9cologique, juste apr\u00e8s la viande de b\u0153uf. La production est gourmande en ressources et d\u00e9pend indirectement des subventions de l'\u00c9tat. De plus, elle est tributaire des aliments pour animaux provenant de l'\u00e9tranger. C'est pr\u00e9cis\u00e9ment \u00e0 ce probl\u00e8me \u00e9cologique que s'attaque New Roots avec ses fromages et produits laitiers v\u00e9g\u00e9taux, ce qui lui permet de remporter le Green Business Award. \"New Roots a un impact \u00e9cologique gr\u00e2ce \u00e0 un m\u00e9lange d'innovation et de tradition et conna\u00eet ainsi un grand succ\u00e8s \u00e9conomique\", explique la pr\u00e9sidente du jury Doris Leuthard \u00e0 propos de cette d\u00e9cision.<\/p>\n<h3><strong>Des alternatives au fromage qui \u00e9mettent jusqu'\u00e0 60% de moins de CO\u2082 que les produits \u00e0 base de lait de vache<\/strong><\/h3>\n<p>L'histoire de New Roots commence par un accident de sport : pour se remettre de sa blessure, l'ancien v\u00e9t\u00e9tiste professionnel Freddy Hunziker est pass\u00e9 \u00e0 une alimentation v\u00e9g\u00e9talienne. Mais il lui manquait de d\u00e9licieuses alternatives au fromage. Avec Alice Fauconnet, il a donc commenc\u00e9 \u00e0 chercher lui-m\u00eame des alternatives au fromage traditionnel. Depuis 2016, New Roots d\u00e9veloppe, produit et vend des alternatives v\u00e9g\u00e9tales et prot\u00e9in\u00e9es au fromage et au lait \u00e0 base de noix de cajou, de lupin ou de pois chiches. Ces produits g\u00e9n\u00e8rent environ 60% de moins de CO\u2082 et consomment 40% d'eau en moins que les produits \u00e0 base de lait de vache, r\u00e9duisant ainsi consid\u00e9rablement l'empreinte \u00e9cologique. New Roots mise sur les m\u00e9thodes de fabrication traditionnelles suisses et travaille en \u00e9troite collaboration avec des fromageries et des exploitations agricoles locales.<\/p>\n<p>\"Notre objectif est de pr\u00e9server la tradition tout en l'enrichissant de nouvelles impulsions. C'est pourquoi nous misons sur l'artisanat s\u00e9culaire de la fermentation et de la maturation naturelles - en utilisant simplement du lait v\u00e9g\u00e9tal comme base\", explique Alice Fauconnet, cofondatrice de New Roots. Les fondateurs ont vendu leurs premiers produits sur le march\u00e9 hebdomadaire de Thoune - aujourd'hui, leurs fromages frais v\u00e9g\u00e9taux, leurs fondues ou leurs alternatives \u00e0 la raclette sont disponibles entre autres \u00e0 la Migros et \u00e0 la Coop et peuvent \u00eatre command\u00e9s en ligne et livr\u00e9s \u00e0 domicile par la poste. Les produits sont en outre d\u00e9j\u00e0 disponibles dans la gastronomie de l'espace DACH et New Roots pr\u00e9voit de poursuivre son expansion \u00e0 l'\u00e9tranger. L'entreprise emploie 40 personnes \u00e0 son si\u00e8ge d'Oberdiessbach (BE).<\/p>\n<h3><strong>Le prix du d\u00e9veloppement durable le plus convoit\u00e9 de l'\u00e9conomie suisse<\/strong><\/h3>\n<p>Le Green Business Award a \u00e9t\u00e9 d\u00e9cern\u00e9 aujourd'hui dans le cadre d'un \u00e9v\u00e9nement organis\u00e9 par Impact Gstaad. Le co-fondateur et CEO Freddy Hunziker commente la victoire : \"Croire en quelque chose qui n'existe pas encore demande du courage et de la volont\u00e9. Le Green Business Award nous montre que notre pers\u00e9v\u00e9rance est payante et que nous sommes sur la bonne voie\". La laiterie v\u00e9gane New Roots s'impose en finale face \u00e0 deux entreprises : Algrano, la place de march\u00e9 en ligne pour le caf\u00e9 vert et Selfrag, qui r\u00e9cup\u00e8re de pr\u00e9cieuses mati\u00e8res premi\u00e8res \u00e0 partir de scories d'usines d'incin\u00e9ration des ordures m\u00e9nag\u00e8res.<\/p>\n<p>Depuis 2019, le Green Business Award r\u00e9compense les entreprises qui allient innovation \u00e9cologique et succ\u00e8s \u00e9conomique. \"En collaboration avec Impact Gstaad, nous permettons \u00e0 nos finalistes d'acc\u00e9der de mani\u00e8re unique \u00e0 des financements de croissance, afin que des mod\u00e8les comme New Roots puissent \u00e9galement avoir un impact international. De plus, nous donnons de la visibilit\u00e9 \u00e0 nos finalistes, car le changement commence par des mod\u00e8les\", explique C\u00e9dric Habermacher, directeur de Green Business Switzerland. Le processus de s\u00e9lection se d\u00e9roule en plusieurs \u00e9tapes.
