Pour la Suisse, on part du m\u00eame ordre de grandeur, ce qui correspond \u00e0 environ 300 kg par habitant et par an. On appelle \"d\u00e9chets alimentaires\" les aliments produits pour la consommation humaine et qui sont perdus ou jet\u00e9s entre le champ et l'assiette.<\/p>\n<figure id=\"attachment_698\" aria-describedby=\"caption-attachment-698\" style=\"width: 680px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-698\" src=\"\/\/www.umweltperspektiven.ch\/wp-content\/uploads\/2017\/01\/Food-Waste.jpg\" alt=\"\" width=\"680\" height=\"458\" \/><figcaption id=\"caption-attachment-698\" class=\"wp-caption-text\">Au total, 2,3 millions de tonnes de denr\u00e9es alimentaires sont jet\u00e9es chaque ann\u00e9e en Suisse.<\/figcaption><\/figure>\n<p>En collaboration avec les branches, l'Office f\u00e9d\u00e9ral de l'environnement OFEV calcule depuis quatre ans les chiffres relatifs au gaspillage alimentaire et poursuit ainsi trois objectifs :<\/p>\n<ol>\n<li>Les pertes de denr\u00e9es alimentaires en Suisse doivent \u00eatre quantifi\u00e9es ; ventil\u00e9es dans les diff\u00e9rents secteurs de la production alimentaire.<\/li>\n<li>Les chiffres doivent permettre de savoir si ces pertes sont \u00e9vitables ou non. Les pertes \u00e9vitables sont des restes alimentaires qui auraient pu \u00eatre consomm\u00e9s au moment de leur \u00e9limination et s'ils avaient \u00e9t\u00e9 utilis\u00e9s \u00e0 temps. Les restes d'assiette, les produits non accept\u00e9s par le march\u00e9 comme les pommes tach\u00e9es ou encore les sous-produits comme le babeurre en sont des exemples. Les d\u00e9chets alimentaires in\u00e9vitables comprennent les parties non comestibles, telles que les \u00e9pluchures et les os, ou sont produits lors de la pr\u00e9paration des repas (d\u00e9chets de pur\u00e9e).<\/li>\n<li>Enfin, on veut avoir des informations d\u00e9taill\u00e9es sur les secteurs qui subissent des pertes.<\/li>\n<\/ol>\n<p><b>Les raisons des pertes dans l'industrie alimentaire<\/b><\/p>\n<p>L'industrie alimentaire suisse produit chaque ann\u00e9e 2,3 millions de tonnes de denr\u00e9es alimentaires et de produits semi-finis. C'est ce que l'OFEV a indiqu\u00e9 dans son <a href=\"\/\/www.newsd.admin.ch\/newsd\/message\/attachments\/47020.pdf\">la derni\u00e8re \u00e9tude \"Pertes organiques de l'industrie alimentaire en Suisse\". <\/a>a \u00e9t\u00e9 calcul\u00e9e. Sur l'ensemble des huit branches principales (par exemple la transformation des c\u00e9r\u00e9ales, le cacao et le caf\u00e9 ou les produits laitiers), les pertes s'\u00e9l\u00e8vent \u00e0 environ 500'000 tonnes. 125'000 tonnes de ces pertes, soit un bon quart, sont des \u00e9l\u00e9ments non comestibles tels que les os ou les d\u00e9chets de d\u00e9corticage.<\/p>\n<p>Les trois quarts des pertes concernent des ingr\u00e9dients comestibles. Elles s'\u00e9l\u00e8vent \u00e0 375'000 tonnes, soit 14% de la production alimentaire totale. Deux causes principales dominent :<\/p>\n<ul>\n<li>le manque de d\u00e9bouch\u00e9s pour les sous-produits tels que le lactos\u00e9rum ou le son (20%).<\/li>\n<li>L'\u00e9tat de la technique (20%) : ces d\u00e9chets alimentaires sont certes comestibles, mais ne peuvent pas \u00eatre \u00e9vit\u00e9s en l'\u00e9tat actuel de la technique.<\/li>\n<\/ul>\n<p>Les causes de ces pertes sont une planification impr\u00e9cise ou des produits d\u00e9class\u00e9s pour des raisons techniques, comme par exemple des tablettes de chocolat endommag\u00e9es. Il s'av\u00e8re donc que la technique rec\u00e8le un grand potentiel pour \u00e9viter les d\u00e9chets alimentaires.<\/p>\n<p>La majeure partie (75%) des pertes organiques g\u00e9n\u00e9r\u00e9es par l'industrie alimentaire est utilis\u00e9e pour l'alimentation animale et reste donc dans le cycle de production alimentaire. Environ 20% sont valoris\u00e9s en biogaz ou recycl\u00e9s sous forme de compost. Seule une petite partie est incin\u00e9r\u00e9e dans des usines d'incin\u00e9ration des ordures m\u00e9nag\u00e8res. Les produits donn\u00e9s repr\u00e9sentent une part marginale, avec moins de 1%.<\/p>\n<p>L'OFEV met cette \u00e9tude \u00e0 la disposition de l'industrie alimentaire, montre le potentiel d'\u00e9conomie pour les branches concern\u00e9es et soutient en outre les branches dans la mise en \u0153uvre de mesures visant \u00e0 \u00e9viter le gaspillage alimentaire.<\/p>\n<p>Source : OFEV<\/p>","protected":false},"excerpt":{"rendered":"<p>Rund ein Drittel der produzierten Lebensmittel geht gem\u00e4ss Sch\u00e4tzungen der Food and Agriculture Organization FAO weltweit verloren.
