(Immagine: zVg)<\/figcaption><\/figure>\n<p><span style=\"font-size: 10.5pt; font-family: 'Arial','sans-serif';\">L'ambra grigia - chiamata anche ambra, ambrox o ambra grigia - \u00e8 considerata il profumo animale pi\u00f9 raro e costoso; a seconda della qualit\u00e0, pu\u00f2 costare fino a 50.000 euro al kg. Per il suo particolare aroma, descritto come afrodisiaco, legnoso e balsamico, e per la sua capacit\u00e0 di far durare pi\u00f9 a lungo le fragranze, \u00e8 molto ricercato dall'industria profumiera. \"La principale fonte di ambra \u00e8 l'ambra grigia. Questo alcol triterpenico si forma come prodotto metabolico nell'intestino di meno del cinque per cento dei capodogli\", spiega Harald Pichler, ricercatore dell'acib e professore presso l'Istituto di Biotecnologia Molecolare della TU Graz.\u00a0<\/span><\/p>\n<p><span style=\"font-size: 10.5pt; font-family: 'Arial','sans-serif';\">Questa sostanza, per lo pi\u00f9 grigia e simile alla cera, entra in mare probabilmente attraverso il vomito dalle \"secche\" dei mammiferi, dove spesso va alla deriva per decenni prima di essere trasportata a riva sotto forma di flotsam. \u00c8 solo attraverso il contatto con l'acqua salata, la luce del sole e l'aria che le sostanze odorose ambrox e ambrinol, responsabili del profumo equilibrato, vengono create dall'ambra grigia attraverso l'ossidazione. A causa della limitazione naturale dell'ambra grigia, dell'elevata domanda industriale e della Convenzione di Washington sul commercio internazionale delle specie minacciate di estinzione (WA), che vieta il commercio di prodotti di capodoglio, l'ambra grigia \u00e8 stata prodotta sinteticamente dalla fine degli anni '30.\u00a0<\/span><\/p>\n<p><strong><span style=\"font-size: 10.5pt; font-family: 'Arial','sans-serif';\">Sintesi precedente inefficiente, costosa e dannosa per l'ambiente<\/span><\/strong><\/p>\n<p><span style=\"font-size: 10.5pt; font-family: 'Arial','sans-serif';\">La maggior parte delle vie di sintesi chimica utilizza come materiali di partenza diterpenoidi di origine vegetale, come lo sclareolo da <em><span style=\"font-family: 'Arial','sans-serif';\">S. sclarea<\/span><\/em>chiamata anche salvia sclarea. Questo metodo presenta due svantaggi: In primo luogo, la corretta sintesi di queste molecole complesse \u00e8 stata finora estremamente costosa e laboriosa. \"Sono necessarie molte misure individuali ed elaborate per ottenere solo un rendimento di circa 4%. Inoltre, la maggior parte delle fasi di produzione richiede l'uso controverso di sostanze chimiche dannose per l'ambiente e di alte temperature e pressioni di conversione\", spiega Sandra Moser, che sta studiando l'argomento nella sua tesi di laurea. D'altra parte, la fragranza sintetica manca della miscela naturale, complessa e ricca di profumi, motivo per cui non \u00e8 raro ricorrere ancora all'ambra grigia naturale nei profumi di alta qualit\u00e0.\u00a0<\/span><\/p>\n<p><strong><span style=\"font-size: 10.5pt; font-family: 'Arial','sans-serif';\">Naturalmente efficiente<\/span><\/strong><\/p>\n<p><span style=\"font-size: 10.5pt; font-family: 'Arial','sans-serif';\">Il Centro Austriaco di Biotecnologia Industriale (acib), in collaborazione con l'Universit\u00e0 di Tecnologia di Graz e il partner industriale ACS International, ha sviluppato per la prima volta un percorso biosintetico completamente naturale che \u00e8 un passo avanti rispetto alla produzione industriale convenzionale: \"Abbiamo trovato un modo per biosintetizzare l'amreina, il precursore naturale dell'ambra grigia, attraverso un nuovo percorso metabolico nel lievito. <em><span style=\"font-family: 'Arial','sans-serif';\">Pichia pastoris<\/span><\/em>produrre. Ci\u00f2 significa che per la prima volta siamo in grado di riprodurre l'intero spettro olfattivo, cos\u00ec come si presenta naturalmente nel capodoglio, per via biosintetica\", spiega Pichler. E possiamo farlo a basso costo, con una qualit\u00e0 inimmaginabile e in quantit\u00e0 maggiori: \"Possiamo ottenere una resa sette volte superiore da una fonte di carbonio semplice come il glicerolo o lo zucchero con l'aiuto di un enzima ottimizzato, rispetto ai processi enzimatici precedenti\", afferma soddisfatto Moser.\u00a0<\/span><\/p>\n<p><span style=\"font-size: 10.5pt; font-family: 'Arial','sans-serif';\">L'innovazione in attesa di brevetto sar\u00e0 portata a dimensioni industriali e quindi a rilevanza di mercato nel prossimo futuro. Non \u00e8 ancora possibile stimare quando ci\u00f2 avverr\u00e0.
