Questa azienda ha creato un sistema di classificazione ed etichettatura che consente agli ospiti di riconoscere immediatamente la sostenibilit\u00e0 di un menu. La collaborazione tra SV e Beelong apre nuove porte alla sostenibilit\u00e0 alimentare nella ristorazione collettiva. Tutti i prodotti utilizzati nei menu sono valutati in base a dieci criteri di sostenibilit\u00e0 e classificati su una semplice scala a semaforo da A+ a E. Il risultato \u00e8 un punteggio complessivo per ogni menu. Il metodo Eco-Score \u00e8 stato testato in sette ristoranti del personale, come il Centro di formazione Holzweid (WBZ), che appartiene all'Universit\u00e0 di San Gallo e che proprio la settimana scorsa ha ricevuto il marchio ibex fairstay grazie ai suoi sforzi nel campo della sostenibilit\u00e0: \"La sostenibilit\u00e0 \u00e8 molto importante per noi. Siamo ancora pi\u00f9 contenti di poter offrire ai nostri ospiti, insieme a SV ed Eco-Score, la possibilit\u00e0 di scegliere consapevolmente un menu sostenibile. Questi sono attualmente in fase di valutazione da parte dell'SBTi e saranno pubblicati a breve. L'azienda ha gi\u00e0 annunciato l'obiettivo pi\u00f9 importante: Il metodo di valutazione olistica Eco-Score di Beelong fa parte della nostra strategia di lavoro basata sui dati. Ci basiamo su risultati scientifici solidi e misurabili. Ci allontaniamo dagli espedienti\", afferma D\u00f6rte Bachmann, responsabile del gruppo Sustainability SV.<\/p>\n<p>Il metodo Eco-Score tiene conto di dieci criteri: Co<sub>2<\/sub>-impronta ecologica, impronta idrica, uso del suolo, stagionalit\u00e0, benessere animale ed etichettatura, biodiversit\u00e0 ed etichettatura, trasporto e distanza, imballaggio, specie in pericolo e metodi di pesca e politica aziendale. Il metodo rappresenta quindi una valutazione completa della sostenibilit\u00e0 dei menu.
